The Animal Kingdom was an amazing experience. It's a really big park though, so renting one of their ECVs is a good idea. There are courtesy wheelchairs to get from the parking lot to the entrance gate. Not a lot of shaded areas, so keep weather in mind when planning a trip to AK, similar to how you would for visiting a zoo (only much funner, obviously). Not all rides are wheelchair accessible, but many are.
